Mills shares his recipes for Grilled Mushroom Bruschetta and for Italian Baked Fish, a dish he developed specifically for cooking demonstrations, in order to dispel the fear shared by many home cooks of preparing fish. Both dishes deliver the fresh, uncomplicated flavors that are Babette's trademarks.
