Dip into Cappers' fare

Dip into Cappers' fare

I am interested in the recipe for Spinach Artichoke Dip from Cappers restaurant in Raleigh. It has an unusual flavor that sets it apart from similar dishes I have had at other restaurants. I believe it might have cheddar cheese in it.

The combination of cream cheese, paprika and cayenne probably account for the sharp cheddary notes in this dip, which actually contains no cheddar.

Cheddar or not, the sharp notes of this dip are in tune with the background jazz for which this North Raleigh restaurant is noted. They ought to harmonize equally well in any setting, from potluck supper to the dining room table.

Thanks to owner Scott Jones, who shares recipes for Spinach Artichoke Dip and for another popular Cappers appetizer, Clams in a Thai-Spiced Beer Broth.
