Two from EVOO

We had dinner recently at EVOO, and thoroughly enjoyed a grouper special they offered that evening. It was fabulous -- spicy and wrapped in pancetta. Do you think you could persuade them to share the recipe?

This popular Five Points spot is named for the extra virgin olive oil that is a staple ingredient in its menu of contemporary Mediterranean fare. The restaurant is owned by Jean Paul Fontaine and Heath Holloman, the talented chef tandem who also own the elegant Bistro 607 on Glenwood South.

Holloman wears the toque at Bistro 607. Fontaine, who is in charge of the kitchen at the more casual EVOO, happily shares his recipe for Pancetta-Wrapped Grouper and its companion White Bean Nage.
