Little tunny (Euthynnus alletteratus)

Also called false albacore, albacore, albies and fat albert, the little tunny is one of the most common members of the mackerel and tuna family. Right now, they are just off the coast in good numbers. They're not adequately appreciated as a food fish and are mostly disregarded. The key to preparation is to bleed and ice the fish immediately and remove the dark strip of meat that extends the length of each fillet.
