Charles and Wendy Park opened Beaufort Grocery Co. (117 Queen St.; 252-728-3899; www.beaufortgrocery.com) in 1991, and over the years the restaurant's fame has spread to the Triangle and beyond. Wendy Park shares the recipe, noting that it was given to her by the late "Matriarch of Beaufort," Alice Wheatly. The recipe is one of many published in the restaurant's cookbook, "Closed on Tuesdays."
