Mojo shrimp salad is just one of some two dozen specialty salads created by chef Matthew Griffith for the extensive new salad bar at Twisted Fork (3751-170 Sumner Blvd., in Triangle Town Center, Raleigh; 792-2535; thetwistedfork.com ). The menu has been revised, too, with a new emphasis on fresh and healthy fare - complete with nutritional information.
