Jerk seasoning adds some zing to salad supper

Two salads - one with jerk-seasoned chicken, the other with berries - make a quick, refreshing summer supper.

Jerk seasoning tossed with cooked, boneless, skinless chicken breast meat gives zip to this Caribbean-influenced dinner. Allspice, the fruit of the pimiento tree, is the key ingredient in this Jamaican seasoning blend. True jerk recipes are grilled over pimiento branches.

Seasonal berries garnished with coconut add a sweet counterpoint to the meal..

Helpful hints

Any vegetables can be used for the salad.

Any brand of jerk seasoning can be used.

Chop cilantro quickly by sniping the leaves with a scissors.


Make berry salad and set aside.

Make chicken salad.

Shopping list

To buy: 10 ounces cooked chicken breast strips or cubes, 1 package jerk seasoning, 1 bag ready-to-eat salad greens, 1 stalk celery, 1 green bell pepper, 1 bunch cilantro, 1 package sourdough rolls, 1 package strawberries, 1 package blueberries, 1 tomato, 1 package flaked or shredded coconut.

Staples: Canola oil, reduced-fat oil and vinegar dressing
