I’m a transplanted Yankee and a barbecue lover. I agree with the April 24 Campaign for Real Barbecue Point of View piece “ The true Tar Heel ’cue challenge” and applaud its efforts, having enjoyed barbecue in all of the barbecue capitals of our country: Memphis, Kansas City, Texas and the Carolinas.
Only in Eastern North Carolina do they serve roasted meat in sauce and have it accepted as barbecue by so much of the population. Only in North Carolina have I had so many locals speak glowingly of places that serve something that is passed off as barbecue but has never been exposed to wood smoke.
Slowly cooking over wood is hard work, but the results are superior. The self-proclaimed barbecue capital of the world deserves, and should demand, better.
