Carl Hinson: Food failures

Regarding the May 29 letter “ Gluten-free issues”: There are more failures in the restaurant business than any other entrepreneurship in this country. I was in the restaurant business for many years, and I also failed a few times until I finally realized the main reason for failure. I was going head over heels trying to pamper people such as the letter-writer.

I would suggest that instead of disrupting the operation of a restaurant, people seek out a restaurant that specializes in gluten-free food, and if there is not one available, they go home and and have a private chef prepare a specialized meal.

There are a thousand headaches involved in operating a restaurant and adding “health clinic” to the menu should not be one of them.
