Lentils and fava from Neomonde

One of my favorite restaurants, is Neomonde on Beryl Road in Raleigh. I would love to have the recipe for the lentil soup. It's absolutely delicious.

The area's oldest Middle Eastern deli, Neomonde opened in 1977 and now boasts two locations in the Triangle: the original in Raleigh and a second, smaller eatery that opened four years ago in Morrisville.

At both locations, customers can depend on freshly made authentic fare -- much of it from old family recipes -- and on the warm hospitality of owners Samir, Joseph and Mounir Saleh.

One of these culinary family heirlooms is Neomonde's Lentil Soup, which to this day is made for the restaurant exclusively by the Mounir brothers' mother, Cecilia. Though the family matriarch is the only one permitted to prepare the soup in Neomonde's kitchen, she has kindly granted permission for us to prepare it in our own.

And, ever true to the famous Middle Eastern tradition of hospitality, Mounir Saleh shares the recipe for another Neomonde favorite, the fava bean salad called Foul (pronounced "fool") Mudammas.
