“But no dish I ate at Dashi was more memorable – or more surprising – than curried beef tendon crackers. Think pork cracklings, but with the deep, beefy flavor of marrow. Lightly dusted with Japanese curry powder, this is a peerless companion for pretty much anything from the bar – a sweeping, thoughtfully curated selection that includes sake, shochu (sake’s potent distilled-alcohol cousin), beer (from draft Ponysaurus Rye Pale Ale to bottled Nipponia Imperial Pilsner), wine and specialty cocktails such as the Hosoi (shochu, plum liqueur and yuzu).
