Just read your review of the Washington Duke Inn. I agree with your summary -- this place is fantastic. Have you ever tried the Braised Beef Short Ribs? It is hands-down the best I've ever had. It's served with a plum reduction sauce. I've been doing braised ribs for several years, and mine are quite good, I assure you. That being said, they don't hold a candle to those at Washington Duke Inn. In fact, if you have any connections, I'd much appreciate procuring the recipe. -- K.L., Holly Springs

Jason Cunningham -- executive chef at Fairview (3001 Cameron Blvd.; 490-0999; www.washingtondukeinn.com), the dining room of the Washington Duke Inn in Durham -- is happy to share his recipe for Braised Beef Short Ribs with Plum-Infused Veal Reduction.
