Cool cuisine from 18 Seaboard

My mother and I dined at 18 Seaboard last night, and we had the Chilled Cucumber Soup with Sweet Carolina Shrimp. It tastes like summer in a bowl! We'd both like to know how to make this soup. If you can do a little snooping for us, we would be greatly appreciative.

No snooping was required, unless you count putting on our trusty Sherlock Holmes deerstalker cap before picking up the phone and calling Jason Smith, chef-owner of 18 Seaboard (18 Seaboard Ave., 861-4318), downtown Raleigh's hottest new after-hours spot. Not only did Smith surrender all the evidence in the case of the Chilled Cucumber Soup, but pastry chef Billy Apperson chimed in with his recipe for Buttermilk Pie with Riesling-Marinated Strawberries.
