I am writing to you to find out if you can get Acme’s Pecan-Crusted Fried Chicken recipe. My husband’s job is transferring us to Philadelphia, and I don’t know how I can live without their fried chicken. I’m not a big fried chicken person, but their fried chicken is very moist and packs a ton of flavor. I would love to be able to make this chicken at home when we move. Thanks so much for your help!
Chef Kevin Callaghan, owner of Acme Food & Beverage Co., was happy to share a recipe that he put on the menu as an afterthought.
Callaghan, who opened the Carrboro restaurant in 1998, said he put the pecan-crusted chicken on the menu for one night – but it has stayed for almost 10 years. That’s just the way things can go sometimes in the restaurant business, he said. Dishes created on the spur of the moment can become crowd favorites, but a dish that a chef labors to develop can fail to catch on.
“It makes me laugh now,” Callaghan said.
That fried chicken is staying on the menu if for no other reason than Callaghan doesn’t want to disappoint the couple who come to the restaurant every Sunday afternoon to order it. He said, “I couldn’t take it off for them.”
