Lundy also tells the story (a little icing on the cake, you might say) of how the recipe came to be. "My favorite white layer cake," Lundy says, "has many versions with different fillings and frostings. We serve it often because it uses egg whites left from making flan and is really good. Xela Intrator, one of my dessert bakers, is fond of cream cheese frosting, so we simply combined some of our favorite ingredients to make this coconut cake."
