Centro’s owner Angela Salamanca happily shared the recipe for her Raleigh restaurant’s take on a traditional dish.
The soup has been on the menu since Centro opened in 2007 as the downtown outpost of Dos Taquitos, which is owned by her uncle, Carlos Salamanca. Uncle and niece are business partners in the downtown restaurant and a new mezcal bar, Gallo Pelon Mezcaleria, opening soon on the restaurant’s second floor.
“It is a very popular dish, especially during this time of year,” Angela Salamanca said.
