Oyster knives and cans of Stroh's beer in hand, four chefs sneak out the back door of Poole's Diner, the funky, acclaimed 75-seat restaurant on Raleigh's McDowell Street. It's 6:50 p.m. on a Sunday night in January, almost showtime.
