Josh Munchel named executive chef at Counting House, restaurant in the upcoming 21c Museum Hotel in downtown Durham
21c Museum Hotels, a small chain of boutique hotels based in Louisville, KY, has named one of its own rising stars as executive chef for its newest venture. Josh Munchel comes to Durham from Cincinnati, where he helped Metropole, the restaurant in the chain’s hotel in that city, win a place on Bon Appétit magazine’s list of Best New Restaurants 2013.
Munchel will take command of an open show kitchen, where diners can get a front-row view of the large grill and spit roaster that will be the focal points of a seasonally changing menu. A dining room with graduated ceiling heights rising to 23 feet will add to the visual drama in a hotel whose properties are known for doubling as contemporary art museums. A private dining room with a glass-fronted cabinet will showcase the restaurant’s wine collection.
The hotel group is refurbishing the historic building at the corner of Corcoran and Main Streets in downtown Durham, and is partnering with Durham-based creative agency The Republik to develop an image that ties into the local community.
