Tom Ferguson of Rise Biscuits and Donuts and Seth Kingsbury, owner/chef of Pazzo in Chapel Hill, have teamed up to create The Rollout, a quick service restaurant that will feature hand-rolled pastas and salads. While the partners are finalizing plans for the restaurant, which they expect to open in the Durham-Chapel Hill area, they’ll be whetting our palates with weekly pop-up dinners at Rise (near the Target at 8200-1003 Renaissance Pkwy.; 919-248-2992).

The pop-ups will be offered on Wednesdays from 5-8 p.m. (or until they run out of pasta), and are slated to run throughout the summer. The first one is tomorrow (June 11), with pasta options ranging from braised beef short rib agnolotti to strozzapreti with pistachio-spinach pesto. For the full menu, check The Rollout’s June 6 post on their Facebook page (

Note that all food is packaged for takeout. You’re free to sit at one of the sidewalk tables out front, but you’ll need to provide your own beverage.
