I have a favorite recipe to request from Dos Taquitos in Raleigh. They make a wonderful chicken mole that rotates as a special on their menu. I’d love to try it at home if you could get the recipe.

For the adventurous, Dos Taquitos executive chef Chad Aultman, 32, was happy to share the recipe. Be ready to pull out your deep fryer because frying is what makes this dish so delicious. Ingredients are simmered, strained, deep-fried, pureed, pureed again and cooked.

Mole sauce is a Mexican classic that combines chocolate, nuts and spices. The combination may sound odd to the uninitiated, but it is delicious.

Dos Taquitos’ chicken mole is very popular with customers. If he were to rank all the dishes on the menu in terms of popularity, manager Ralph Ottaviano said, “It’s in the top 5.”
