Risotto rhapsody

We recently took out-of-town guests to Azure Grille in Meadowmont Village, Chapel Hill. Our friend had risotto with mixed mushrooms that was to die for. We would love to have the recipe for ourselves and to forward to our friend. -- M.C., Chapel Hill

Executive chef Matt Romatzik is happy to oblige, noting that the key to the risotto's deeply earthy flavor is the homemade mushroom stock. After sampling the dish for ourselves, we here at Specialty of the House wouldn't be surprised if the recipe gets forwarded to lots of people.
