Sublime dishes from Herons

We recently had a sublime dining experience at Herons in the Umstead Hotel. The Apple Cole Slaw was the surprise hit - such a simple dish, but packed with subtle flavors. Since we are in the midst of apple season, it would be wonderful to have the recipe.

Herons (100 Woodland Pond; 447-4200; www.heronsrestaurant.com) opened in January, and has already become a popular fine dining destination in Cary. The restaurant owes much of its popularity to executive chef Phil Evans, whose creativity and focus on fresh local ingredients are abundantly evident in his seasonally evolving menu. Apple Cole Slaw is a delightful example of the chef's talents, transforming a common fruit into a special dish. Evans also shares his recipe for Petite Lettuces, Black Walnuts and Warm Goat Cheese in Honey Walnut Vinaigrette.
