Over the years, Irregardless Café (901 W. Morgan St.; 833-8898; www.irregardless.com) has gradually expanded its original all-vegetarian menu to embrace nonvegetarian dishes. But owner/chef Arthur Gordon can still be counted on to deliver inventive meatless fare. His vegan cassoulet is savory evidence.
Gordon notes that the recipe involves lots of prep work but is worth the effort. He adds that the dish is not as sweet as you might think, as the sugars in the pineapple are balanced by the fruit's acids.
