James Beard award-winning chef Sean Brock is the next food celebrity to be the guest of honor at Fearrington Cooks & Books series.
The dinner with Brock, who owns restaurants in Charleston, S.C. and Nashville, will be 6:30 p.m. Oct. 29. The dinner includes drinks, an autographed copy of Brock’s cookbook, “Heritage” and samples from the cookbook. Tickets cost $95 per person.
The menu includes these dishes: cracklin cornbread; benne-buttermilk rolls; fried chicken and gravy with Vidalia onion gratin; grilled chicken wings with burnt-scallion barbecue sauce; slow cooked ribeye with potato confit and green garlic parsley butter; Husk cheeseburger; charred beef short ribs with glazed carrots and black truffle puree cornmeal; fried pork chops with goat cheese smashed potatoes and cucumber-pickled green tomato relish; pickled shrimp with cilantro and fennel; swordfish with celeriac roasted in hay, cider braised lettuce stalks and country ham emulsion; chocolate Alabama stack cake; buttermilk pie with cornmeal crust; Carolina Gold rice pudding with candied kumquats; and sweet potato doughnuts with bourbon carame.
