Last year when I needed to finally master homemade gravy, I turned to Wake County cooking instructor Sharon Morf.
Morf teaches classes out of her southern Wake County home and has a series of upcoming classes. The classes are 6-8 p.m. Tuesdays and cost $40, which includes a sit-down dinner, wine and recipes. Here is the schedule:
Nov. 11: Thanksgiving sides. Menu: Pear-ginger chutney cranberry sauce, mushroom gravy, winter squash, saffron mashed potatoes and tangy and zesty sprouts.
Nov. 18: Homemade gifts from the kitchen.
Nov. 25: Appetizers for holiday entertaining. Menu: Artisan cheese pops, bang bang shrimp avocado toasts, Parmesan kale beignets, pate with homemade chips, and churros with chocolate sauce.
Dec. 2: Holiday dinner party. Menu: Beef Wellington, scalloped potatoes, roasted green beans with oranges and brown butter apple tart.
Dec. 9: Holiday hors d’oeuvres. Menu: Tarte flambee leek tart, warm Camembert with wild mushroom fricassee, mini croque-monsieur, bacon candy and smoked salmon crisps.
Dec. 16: Holiday cookies and desserts. Menu: Brown butter salted caramel chocolate chip cookie, candied ginger-sugar cookie, lemon and rose madeleines, rum balls and Neiman Marcus squares.
