After a couple of tantalizing false starts, Patrick Jane’s Gourmet Pizza Bar has fired up the ovens and opened its doors in Cary’s Shoppes of Kildaire, a few doors down from Trader Joe’s. The restaurant’s unusual name is taken from the middle names of its husband-and-wife owners, Kevin and Ngiare Hubbard.
Even more distinctive than the name is the elongated oval shape of the pizzas, all of which are available with an organic or gluten-free crust.
Or will be soon. “We’re opening with a partial menu,” says Kevin Hubbard, “to give our staff a chance to get up to speed. We’ll eventually have some unique appetizers and a rotating choice of desserts, but for now we want to concentrate on the pizzas.”
Hubbard adds that the gluten-free crust got a last minute pre-opening tweak to make it crisper. Pizzas made with the new buckwheat-rice flour mix should be available in a few days, along with a selection of gluten-free beverages (including beer) to match.

In the meantime, the thin regular crust (made with organic flour) and extensive topping selection (including an exceptionally strong list of vegetarian and vegan options) should provide ample temptation for most. Mix-and-match to your heart’s content, or choose from combos such as Mexican Mole (with hormone-free chicken) and Fig jam (homemade fig jelly, gorgonzola, prosciutto, arugula).
