Chapel Hill’s Southern Season has a few cooking classes that caught my eye:
▪ Their biscuit classes typically sell out. They have a beginner Southern biscuit class at 5 p.m. July 1. Menu: Biscuits two ways (rolled and drop); homemade jam; sausage gravy; creamy grits and fruit salad. Cost: $35.
▪ They have an advanced biscuit class at 5 p.m. July 6. Menu: Pimento cheese; sweet potato biscuits with ham salad; fruit cobbler (using homemade biscuits) with vanilla bean ice cream. Cost: $45.
▪ Chapel Hill cookbook author Sheri Castle is teaching a class on Garden Fresh Southwestern Feast at 6 p.m. July 16. Menu: Chilled avocado soup with crab salad; grilled summer squash salad with honey-lime-tomato vinaigrette; buttermilk-brined skirt steak with chimichurri sauce; ancho chile corn and potato mash; salsa and vegetable sauté; blueberry and cajeta bread pudding with sweet corn ice cream. Cost: $50.

▪ Renowned Virginia lamb farmer Craig Rogers of Border Springs Farm is teaching a class on how to grill lamb at 6 p.m. July 18. Cost: $45. Menu: Lamb kebabs, Mediterranean spiedini style; seared lamb hearts; boneless leg of lamb; smoked lamb shoulder; and seasonal sides.
