Rose’s Meat Market & Sweet Shop has several upcoming butchery classes:
The Durham store has a hands-on pork butchery class from 6-9 p.m. July 19, Aug. 16 and Aug. 23. In teams of six, class participants will break down half a hog, separate the primals and cut each piece into its respective cuts. Participants will take home about 10 pounds of meat, lard and some pork stock. The class costs $175.
From 6-9:30 p.m. Aug. 30, the store will offer a hands-on sausage class. The class will make three types of sausage; one fresh, one emulsified and one smoked. Participants will take home two pounds of sausage and two pounds of ground pork. The class costs $150.
