What Hillsborough needs is a sandwich shop. That’s the assessment of Matt Fox, Jeremy Blankenship and Dean James, and they should know. Hillsborough residents all, the three have — individually or in partnership — brought the historic town some of its most popular restaurants: The Wooden Nickel Pub, Hillsborough BBQ Co., and most recently, La Place.
If you’re familiar with any of those establishments, you’ll know that the partners (now officially known as First We Eat, Inc.) don’t just have any old sandwich shop in mind. Bona Fide Sandwich Co., which they plan to open in the fall in downtown Hillsborough at 104 N. Churton Street, will raise the bar with a strong emphasis on local produce and artisanal foods.
The menu is still in the early stages of development, but Dean James says “local” will include everything from the breads to the meats, sausages, cheeses, and other fillings. The partners are already preparing to put up house-made pickles, and a fountain dispensing homemade sodas is also in the works.
“Salads will be a big part of our program, too,” says James. A selection of soups and locally baked pastries will round out the initial offering.

A small counter service restaurant located in a former jewelry shop, Bona Fide Sandwich Co. (facebook.com/bonafidesandwichco) will offer takeout and local delivery.
