Durham Spirits Co. has a few interesting cooking classes inspired by the changing season:
▪ Fall Southern Nights, 6-8 p.m. on Oct. 21. Menu: roasted Gruyere sweet potato tart; roasted pumpkin salad with cranberries; benne seed-encrusted pork with apple bourbon sauce; and maple brown butter pear tart with pecan crust.
▪ All About Pumpkin, 1-3 p.m. on Oct. 25. Menu: beer-battered pumpkin; roasted pumpkin and cranberries with sage vinaigrette, pumpkin and poblano pozole with pumpkin guacamole; pumpkin and chorizo hash with pumpkin seed salsa; winter squash aigre-doux; pumpkin roulade with pumpkin seed brittle.
▪ Fall Soups and Stews, 6-8 p.m. on Oct 28. Menu: butternut squash with lentils and coconut; pumpkin and pork pozole; caramelized apple and onion soup; sopa de fubà (a hearty Brazilian soup with collard greens, cornmeal and sausage); brown butter sausage bread.
