Two City Kitchen alumni are taking over the former Cafe Symmetry spot in Carrboro’s Carr Mill Mall.
The restaurant is being opened by Younes Sabouh and Emma Dunbar, who have been the chef and general manager respectively at City Kitchen in Chapel Hill for the last four years. (City Kitchen is one of Giorgios Hospitality Group, which also own Vin Rouge, Kipos, Parizade and nine other restaurants from Wake Forest to Asheville.)
“We’ve been looking for a long time,” Dunbar said Monday.
The couple, who are romantic as well as business partners, had previously looked at the same space at Carr Mill Mall before it became Cafe Symmetry. It wasn’t until recently that this space worked out for them, Dunbar said.
Tandem’s menu will offer regional American cuisine with international influences. Sabouh will source ingredients from family-owned local farms. The menu will offer a la carte ordering as well as shared plates. The restaurant will be open for lunch and dinner. Sabouh and Dunbar hope to open their restaurant, Tandem, by April.
Sabouh, who is originally from Morocco, worked in Europe, including as the personal chef for the family who owns the Hermes luxury goods line and travelled the world with them. Sabouh came to the Triangle to work at Herons restaurant at The Umstead Hotel and Spa in Cary. Dunbar previously worked Crowne Plaza and Loews hotel groups before working at City Kitchen.
