Another great picnic dessert: Pig Pickin’ Cake

Pig Pickin’ Cake is a classic dessert served alongside whole hog barbecue and during the holidays in North Carolina.

For those who do not know, The New York Times Upshot blog posted a map two years ago of the unusually popular recipes searched via Google by state for Thanksgiving. In North Carolina, it was Pig Pickin’ Cake, which is made with box cake mix, pudding mix, Cool Whip and mandarin oranges.

While some folks may turn up their nose at this concoction, I say that leaves more for the rest of us.
