Darlene Hultgren of Wake Forest shared this recipe for ambrosia.

Ambrosia is a popular dish at potlucks, church suppers and family gatherings.

Hultgren’s version combines instant vanilla pudding, buttermilk, mandarin oranges, Cool Whip and shortbread cookies.

It is delicious: not too sweet, crunchy from the crookies, juicey from the oranges.

Ambrosia

From Darlene Hultgren of Wake Forest.

1 (1.5-ounce) sugarfree instant vanilla pudding

2 cups buttermilk (low-fat is OK)

1 (8-ounce) carton Cool Whip, partly thawed

2 (11-ounce) cans Mandarin oranges, drained

12 chocolate-striped shortbread cookies, crushed

Combine all the ingredients in a large bowl. Stir to fully combine. Serve as salad or dessert.

Yield: about 12 servings.
