Feel Good Foodie, also known as Yumna Jawad, created the Feel Good Foodie’s Greek Salmon recipe as an easy weeknight dinner. She was craving another way to incorporate omega-3-rich salmon into her family’s food plan. Check out this video from Yumna’s site to see how simple it is to make! Another thing I love about this recipe: From start to finish, it’s ready in less than 30 minutes! And being a mom of a 9-year-old, I’ll take as many of those recipes as I can get. Once you master Yumna’s air fryer salmon recipe, start exploring different toppings. I like mango salsa with salmon but an apple slaw or even a creamy yogurt dill sauce would be dinner perfection.

Ingredients

  • 4 salmon fillets, about 1" thick
  • 5 Tbs. olive oil
  • 1/4 cup lemon juice
  • 2 garlic cloves, pressed
  • 1 tsp. oregano
  • 1/2 tsp. dried dill
  • 1/4 tsp. crushed red pepper
  • 2 Tsp. red wine vinegar
  • 1/4 tsp. + pinch salt
  • 1/4 tsp. + pinch pepper
  • 3 ripe tomatoes, seeded, chopped
  • 1/2 English cucumber, peeled, chopped
  • 1/2 small red onion, chopped
  • 4 oz. Kalamata olives, sliced

Instructions

Pat salmon dry and place in shallow bowl. Add 4 Tbs. olive oil, lemon juice, garlic, 1⁄2 tsp. oregano, dill and red pepper flakes. Toss to combine, making sure each salmon filet is coated with marinade. Transfer bowl to fridge and marinate fish 15 minutes.

Grease air fryer basket with olive oil spray. Add salmon in single layer, skin side down. Season with pinch of salt and pepper. Air-fry salmon at 400°F for 7–9 min., or until salmon is bright pink and flaky.

In bowl, whisk vinegar, 1 Tbs. olive oil, 1⁄2 tsp. oregano and 1⁄4 tsp. each salt and pepper. Add tomatoes, cucumber, onion and olives; toss. Serve with salmon.

** To add even more tangy zip and a pop of color, Yumna likes to add crumbled feta and chopped parsley to the Mediterranean topping
