Specialty of the House: Weaver Street Market’s Vegan Chicken Salad
Weaver Street Market in Carrboro has a yummy vegan “un” chicken salad. Is it possible to get the recipe?

The request did not surprise Liz Matthews, food house kitchen manager for Weaver Street Market, who said the vegan chicken salad is the second most popular salad behind the store’s regular chicken salad.
That’s saying something since the cooperative grocery store with three locations sold 68,000 units of compound salads last year, according to Matthews. (Compound salads are pasta and protein salads.)
Matthews said that the company has been making the vegan chicken salad with soy nuggets and vegan mayonnaise for about a decade. The recipe has evolved over the years. Even after she shared it several weeks ago, Matthews said they started roasting the soy nuggets to give it more depth of flavor.
“We are especially proud of this product because it supports another local business, Delight Soy!, whose products can be found in our freezer sections,” she said. Delight Soy! is a Morrisville-based company that makes soy meat alternatives, which are sold in the freezer case at Whole Foods, Weaver Street and other vegan-friendly grocery stores.
Matthews said the vegan chicken salad is sold as a daily prepared sandwich or wrap and in prepackaged containers in the grab-and-go case. It is available at all three Weaver Street Markets in Carrboro, Chapel Hill and Hillsborough, plus Durham Co-op Market, Company Shops Market in Burlington and Deep Roots Market in Greensboro.

Weaver Street Market’s Vegan Chicken Salad
10.5 ounces Delight Soy! nuggets, slightly thawed
1 cup vegan mayonnaise
1/8 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup diced celery
1/4 cup chopped curly parsley
Place soy nuggets in a food processor and pulse until coarsely chopped. Place in bowl and combine with mayonnaise, salt, pepper, celery and parsley. Stir to fully combine.
Yield: about 3 cups
