Let this Blueberry Coffeecake recipe add some patriotic color to your summer

The Fourth of July doesn’t quite stack up against the competition for being a food holiday, but if you make this blueberry coffeecake it could have a fighting chance.

This week’s recipe is a family favorite any time of the year. It’s great for the Fourth of July, though, because you can make it a day ahead and have it to snack on all weekend.

It takes the summertime favorite blueberry and mixes it into a moist, delicate coffeecake. Add some sliced strawberries or a few raspberries and you have a delicious red, white and blue treat perfect for a hot afternoon or warmer-than-average morning. The coffeecake can stand alone as a breakfast or supplement a meal as a sweet dessert.

This coffeecake can be made with blueberries or blackberries. I prefer to use frozen blueberries because it seems there’s less moisture in them, and it bakes better. When I use blackberries, I use fresh. It might be fun to do a combo of berries and include some raspberries, too. Make it a red white and blue coffeecake for the holiday.

How to make Blueberry Coffeecake

First, preheat your oven to 350 degrees.

In the bowl of a stand mixer or in a bowl with a hand mixer, cream butter and sugar, then incorporate the eggs. Fold in vanilla and sour cream. Slowly add dry ingredients to combine. With a rubber spatula, fold in blueberries.

Use a nonstick spray to prepare a bundt pan or tube pan. Pour about 1/3 of the batter into the pan and smooth with a rubber spatula.

In a separate bowl, combine brown sugar, cinnamon and nuts for the filling. Sprinkle half of the filling on top of the batter in the pan. Add 1/3 more batter to the pan, followed by the remaining filling. Finish by pouring the rest of the batter.

Place bundt pan or tube pan to the oven and bake for 55 to 60 minutes, or until golden brown and fully baked. Let cool in pan.

Remove from pan, sift powdered sugar over top. Garnish with additional berries if desired.
