This year, North Carolina State Fair visitors will find among the new food offerings many options that pay tribute to the Tar Heel state.

There will be barbecue, battered and fried, in different forms. Cheerwine as a slush, “dirty” Cheerwine topped with cream, and Cheerwine lemonade.

But there will also be options that better represent other regions. Take the cheese curd tacos, for example — a Midwestern delicacy filling a crispy shell. Or the South of the Border Stuffed Turkey Leg: a turkey leg stuffed with Mexican street corn and cotija cheese.

There are several trends in this year’s list of new foods at the state fair, scheduled for Thursday, Oct. 16 through Sunday, Oct. 26.

Fried snacks, sweet and savory alike, are well-represented, along with foods on a stick. Several vendors will showcase their takes on the viral treat Dubai chocolate, made with chocolate and pistachios.
