There’s a major chicken tender trend going on in the Triangle, and the newest restaurant just opened.

A new Johnston County location of Slim Chickens opened recently in Clayton. The fast food brand opened its first Triangle in Smithfield in 2024 and has now added a second JoCo restaurant at 11606 Clayton Blvd.

The Clayton Slim Chickens is owned by restaurateurs Luke Simmons and David Harris via Fly the Coop, LLC. There are now 10 Slim Chickens locations in North Carolina, from the Charlotte suburbs to Jacksonsville.

“Our goal has always been to grow thoughtfully in communities like Clayton, bringing great food, strong teams and a place people can come back to again and again,” Simmons said in a news release. “We’ve been looking forward to opening in this area, and we’re excited to officially become part of the community.”

Slim Chickens specializes in chicken tenders and sandwiches, going with a buttermilk brine on the chicken. Other favorites include mac and cheese bowls, fried pickles and fried mushrooms.

In the last few years, national chicken tender chains have moved into the Triangle in a big way. Raising Cane’s, Guthrie’s, Southern Burn and Dave’s Hot Chicken have all opened new locations.
