It will have a patio, just like the other Eastcut locations, Bankos said. About 25 full- and part-time employees will be hired for the Cary restaurant.
Waverly Place, located near Tryon and Kildaire Farm roads, is an open-air shopping center anchored by Whole Foods Market and the CMX CinéBistro movie theater. Eastcut will join a mix of local and chain restaurants including Chicken Salad Chick, Enrigo Italian Bistro, Gonza Tacos y Tequila, Rise Southern Biscuits & Righteous Chicken, Shake Shack and Two Roosters.

The sandwich shop, which was the first restaurant to open at Raleigh Iron Works, is known for its menu items reflective of East Coast deli classics.
Popular orders include cheesesteaks ($13-$16) and Italian, chicken cutlet and turkey sandwiches, Bankos said. Eastcut offers multiple varieties of each. For example, both The Jet and Parm ($13 on a Regular Roll, $17 on a Hero Roll) are made with hand-breaded chicken cutlets and mozzarella cheese, but have different sauces and fillings.
Besides sandwiches, burgers — which are only available at night ($6 on Thursdays) — and mozzarella sticks are fan favorites.
Eastcut just started serving breakfast and expects its egg sandwiches to become popular, especially on weekends.
Coffee from Black & White Coffee Roasters is now brewing at Eastcut, to go along with the breakfast menu, but the sandwich shop also offers a relatively robust beverage program. Seasonal lemonades, alcoholic and non-alcoholic spritzes, beer and wine are all available.
